If you are anything like me, you count down the days until fall just for an excuse to make, eat, or buy ANYTHING related to pumpkins.
So I am here with an easy pumpkin chocolate chip cookies recipe!
I normally am not someone who cooks with almond flour, but this recipe made me realize how amazing it is!
If you have any issues with gluten (bloating, stomach pains etc) and love cookies, this recipe gives you the best of both worlds with no issues!
I purchased my almond flour from Walmart, you can find it here and add it to your cart.
Above you will see all the ingredients, for these soft pumpkin chocolate chip cookies.
Fun Fact: I have found that keeping my sugar in a container instead of in the bag has been a GAME CHANGER as it does not get all over the place when measuring it out.

Like I said, at the beginning of this post. This recipe is so simple and fast it's as easy as 1,2,3!
You will mix the sugars, butter, and oil and then add in all the dry ingredients and mix.
Then to the best part... the chocolate chips. I added about a cup and a half.
Everyone in my household loves chocolate so it worked out well but you can either add a little less or more.
Don't be alarmed at the consistency of the dough, it will be sticky and a little hard to roll.
If you pop the dough into the fridge for 10 minutes and then roll it into balls, it will be even easier to roll!
These cookies do need time to settle when you take them out of the oven.
Let them sit on the stove for about 15 minutes before digging in!
If you have a little more patience, pop them into the fridge for 20 minutes and then eat them! CHEFS KISS!
I hope you enjoy these pumpkin chocolate chip cookies!
